Although I don't really know what the significance of birthstones is... I do know what the significance of gemstones/crystals is (which is what birthstones are). And that varies between each stone.
But I'm going to guess that the significance of birthstones is a marketing technique. I don't know if that's true though.

Topaz. I think it got to be November's birthstone because of the orangey-brown type, a reminder of autumn.
I like blue topaz the best though, not the orangey-brown one. xd

to all who do not like their birthstones...I will say that there are a couple of different stones per month to choose from and also....almost all stones(all that I have see or heard of at least) come in many different colors....so there are options that way too....the colors that we know a stone as now are just the most popular or common collor for that stone....diamonds can be yellow, champaign, a dark reddish brown color(similar to garnet), and even blue which is more rare....another example I'll put is sapphire...it can be blue, white, pink you name it.....amethyst I know at least comes in green as well as purple.....so really there are options out there....I found all this out from studying stones and working in a jewelry department in a store

I found an online store that has a lot of info on gemstones: http://www.crystal-cure.com/gemstones.html(click their pictures for more detailed info) and also some random info too, just look around the site. there was a nifty little chart somewhere that shows the different birthstones for each month, there are many origins for them. it is all in the site though. biggrin
