Sindeira Camwen I admit I started salivating at the description of the coconut cake myself. 3nodding Since this is his favorite one of all, I'm thinking of a massive coconut macaroon with a subtle chocolate drizzle on top. This isn't very cake- like in the traditional sense but omg, doesn't that sound good? oh my! "good" doesn't cover it! eek Here are some in smallish cookie form..

Oh, my gosh! I am so very tempted to make some of those, but I'm managing to resist for the time being. Hey, Exxos, don't you have one of those high- tech mind readers? If not, why hadn't you invented a reader of your own or asked for one on your birthday, ya goof?

Kujujuwa Ohhhhh... Late birthday present of adorable Heechul infront of a looks to be fake skyline!  I can't think of a place where that boy wouldn't be adorable. 4laugh Yes, the question drifts into the realms of a gradient from least to most adorable. Least being probably a sewage treatment plant and most being naked with a bow on his head on by bed? whee

I whined a great deal to get a recipe, so far she still refuses. gonk As for mind reading devices, they technically do have those, but they can't discern the thoughts as much as the areas of the brain activated and extrapolate general meanings.

I have officially OD'd on it. blaugh It's three layers of dense coconut cake with a toasted almonds and toasted coconut filling similar to a german chocolate cake's in structure, then the whole thing is enrobed in coconut butter creme frosting and patted down with toasted, shredded coconut. *FLE read the description and realized her mouth had drooled over her younger brother's laptop* gonk Egads! *wipes the laptop with a tissue* Sounds yummy! Too bad that I'm still recuperating from the infection. Good news is that the worst part was over ( fever, post nasal drip and phlegm). Anyway, I'm glad that you enjoyed your day, Exxos. @ everyone in the Canteen: Sorry for being so hallucinogenic the other day. I should make a mental note saying that no sick members (who are taking strong medication) are allowed to go to the Canteen without the doctor's permission. sweatdrop

Oh, no~ no, you're going about it all wrong. It's all about the flattery and your desire to share this marvelous experience, which your mother had so generously bestowed upon you, with your friends. Hmm.. and I suppose that there aren't chocolate, caramel or vanilla regions of the brain, are there? Darn you, science! I simply want to know how many cups of sugar and flour to put in.

At least the cooking temperatures and times are about the same. *yearns to have the actual recipe* I want a slice.. I would imagine that it tastes positively marvelous.

I got curious and went to look up coconut cake... I want to make it now...
Ingredients 3/4 pound (3 sticks) unsalted butter, at room temperature, plus more for greasing the pans 2 cups sugar 5 extra-large eggs, at room temperature 1 1/2 teaspoons pure vanilla extract 1 1/2 teaspoons pure almond extract 3 cups all-purpose flour, plus more for dusting the pans 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1 cup milk 4 ounces sweetened shredded coconut
For the frosting: 1 pound cream cheese, at room temperature 1/2 pound (2 sticks) unsalted butter, at room temperature 3/4 teaspoon pure vanilla extract 1/4 teaspoon pure almond extract 1 pound confectioners' sugar, sifted 6 ounces sweetened shredded coconut Directions Preheat the oven to 350 degrees F. Grease 2 (9-inch) round cake pans, then line them parchment paper. Grease them again and dust lightly with flour.
In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar on medium-high speed for 3 to 5 minutes, until light yellow and fluffy. Crack the eggs into a small bowl. With the mixer on medium speed, add the eggs 1 at a time, scraping down the bowl once during mixing. Add the vanilla and almond extracts and mix well. The mixture might look curdled; don't be concerned.
In a separate bowl, sift together the flour, baking powder, baking soda and salt. With the mixer on low speed, alternately add the dry ingredients and the milk to the batter in 3 parts, beginning and ending with dry ingredients. Mix until just combined. Fold in the 4 ounces of coconut with a rubber spatula.
Pour the batter evenly into the 2 pans and smooth the top with a knife. Bake in the center of the oven for 45 to 55 minutes, until the tops are browned and a cake tester comes out clean. Cool on a baking rack for 30 minutes, then turn the cakes out onto a baking rack to finish cooling.
For the frosting, in the bowl of an electric mixer fitted with a paddle attachment, combine the cream cheese, butter, vanilla and almond extract on low speed. Add the confectioners' sugar and mix until just smooth (don't whip!).
To assemble, place 1 layer on a flat serving plate, top side down, and spread with frosting. Place the second layer on top, top side up, and frost the top and sides. To decorate the cake, sprinkle the top with coconut and lightly press more coconut onto the sides. Serve at room temperature.
