My day is going pretty well. Presents and well-wishing from my friends, my father left on a 3+ week trip and I can have the A/C on again, my mother is making me my favorite cake (raging and flipping out the entire time, but hell, a coconut overload cake is worth it! 4laugh ), and the past week of avoiding oxylates was rewarded with allowing me to have one of my favorite lunches – katsu-style zucchini with katsu sauce rice bowl. And it's only 1/8th into it! blaugh

Hooray for coconut overload cake~! Actually I don't believe that I've ever had one of those.. recipe please? And happy birthday, Exxos. You truly deserve all that you have and so much more.

Sindeira Hooray for coconut overload cake~! Actually I don't believe that I've ever had one of those.. recipe please? And happy birthday, Exxos. You truly deserve all that you have and so much more. You know you're special when Sin makes an appearance for you! *hugs* I will try to get the recipe, but, like so many other recipes, she's does not share them too often. sweatdrop One of these days she will be gone and I will be torn between my soul being freed and losing a massive number of recipes.

I have officially OD'd on it. blaugh It's three layers of dense coconut cake with a toasted almonds and toasted coconut filling similar to a german chocolate cake's in structure, then the whole thing is enrobed in coconut butter creme frosting and patted down with toasted, shredded coconut.

We really should record each and every one of those splendorous recipes, to ensure that our tasty treats may be shared and enjoyed from one generation to the next. Because heaven forbid that they be lost, for no- one to taste ever again.. now this would be a true tragedy. And I simply must know what your favorite cake tastes like, in all of its coconut glory.

Camwen I admit I started salivating at the description of the coconut cake myself. 3nodding Since this is his favorite one of all, I'm thinking of a massive coconut macaroon with a subtle chocolate drizzle on top. This isn't very cake- like in the traditional sense but omg, doesn't that sound good?
