I know this is a weird question, but anyone know how to make pumpkin pie? I've giving it a go for the first time this year and don't have any idea what to do.
Making it from scratch or from canned pumpkin?
Canned pumpkin pie (recipe is usually on the can):
Buy a premade pie crust, one or two cans of pumpkin and one or two cans of condensed milk.
Mix pumpkin and 1 tsp pumpkin pie spice (nutmeg, cinnamon, allspice, cloves) and condensed milk, mix thoroughly, spoon into pie crust
oven should be preheated to about 350 degrees Fahrenheit. Bake for 15-20 minutes or check by inserting a toothpick in the middle until about an inch down and the toothpick comes out clean.
From scratch you can skimp by getting a can of condensed milk, but it's still going to be a little bitter so you should add honey or fine turbinado sugar. Get a pie pumpkin at the produce section. Follow instructions on the sticker or cut pumpkin in two halves lengthwise, scoop out seeds and pulp but leave the inner rind (this is the part for the pie). Place emptied side down on a greased pan and bake at 325-250 F for about 15 minutes. Scoop out the soft rind and put in a blender on puree for 15-20 seconds with some pumpkin pie spice. Mix into a bowl with sweetener and condensed milk and bake for 15-20 mins at 350 F.
Wash seeds and save them, let dry overnight and bake on a greased pan the next day at about 300 until golden brown. Season with seasoned salt or sugar.
Give it a kick by using Saigon cinnamon and by grinding the nutmeg yourself.
