Tiem's fighting style was listed as such due to the weapon he brought. It was the most relevant school of swordplay to his personal style. If he'd have brought a different weapon, it'd have been a different martial weapon style listed. Such as the one he's using right now; shortstaff.
BLOODBATH removes powers, abilities, magic, whatnot from characters. Tiem has no powers, abilities, magic, whatnot. He's a weaponmaster, his fighting style is to use anything and everything as a weapon. He wouldn't be as good with a sword as Lancelot, or as sharp with a bow as Robin Hood, but he can certainly hit you with a log, or a folding chair, or the knife he pulls out of your belt, or the spear he twists out of your grip, etc.
As for the Street... clearly, he would be arguing power over accuracy. Hence why he's hitting hard and fast. Aiming for the same place for successive hits. He's not trying to swat a fly out of the air or slice your suspenders off, he's trying to go upside your head.
