Rip off roof? Fine. It's an expensive repair, but pretty 'normal.'
Rebuild entire second floor? Uh... That's rather extreme.
If you had remembered the layout in advance, would you have had the thieves retreat to the second floor, then had the roof come off?

I just think it's unlikely for a helicopter to go unnoticed long enough to tear through the entire second floor as an escape route. Surely the police would have tried to shoot it down once it started to raze the roof. Not to mention the kind of horsepower necessary to even DO that.
