To clear things up:
Infinities reffers to two things.
The first is a sort of "era", just like the Old Repulic Era, the Republic Twilight Era, The GCW Era, NJO era, Legacy Era that are stamped on each EU novel. Infinities doesn't really confine to one actual "era" but if you see an Infinites Stamp on an EU volume in place of an actual Era stamp, that means that the events of the story are non-canon. Most TALES stories are Infinities, thereby not canon. However, if elements are referenced in other material, that element can become non-Infinities, thereby canon.
The second reffers to a series of comics taht were made, and basically everything Elvis said.

Yeah, the ANH infinities series was great, and I don't know about the ESB or RotJ ones, but they're probably as good. They sould make PT Infinities at some point, like if Qui-gon had killed Maul, instead of it being the other way around... or if Dooku had killed Yoda, or if Mace kicked Palps' a**, or something like that...

Or maybe one if Padme had lived. That would be interesting. Luke and Leia would grow up with their mother, maybe with Obi's help, become Jedi.
Or Anakin might turn them all to the dark side and have dark Jedi children.
Then of course, the next 3 movies would be completely different...

That's exactly the point. They show how drastically the universe would have changed, if one thing had happened differently.

AotC: What if Palpatine didn't win the vote of no confidence/clone army
RotS: What if Mace Windu had killed Palpatine?

Actually, I think in AotC it should have been if Jar Jar hadn't nominated him, 'cause palps was counting on the Gungan. In AotC, it should have been something else, like if Obi-Wan had been left behind on the ship, or died in combat.
