Epic comes from the roleplay, not the character.
My suggestion: Try using a race who isn't pacifistic.

Among other things. Afterall, you have to have the ability to be killed too. Tends to be really helpful if you pick a race that is somewhat mortal.

The more exotic you go, the less powerful he's going to wind up being. Largest number of force users is human and their counterpart humanoids.
Why not do a hutt sith though? Take over Nakara in huttspace so he can come join me.... [/wishful thinking]
