It's really hard to just pick one song >_<
Of course, I love all the vocal tracks from X! The most notable ones are Secret Sorrow and Strength. I also like Sadame, an instrumental. It's a bit overplayed in the anime though.
I also enjoyed the opening and ending themes to Angelic Layer (Be My Angel and Starry Night). The soundtrack of Tsubasa is great, obviously (since it's by The Great Yuki Kajiura).

I don't remember what it is called but i like the song that sakura sings in tsubasa. The one it the cafe cats eye i think it was...
