I like the work of Matt Bellamy from Muse. He has such a different take on guitar playing compared to a lot of generic players that near enough all sound the same.

Depends on what mood I'm in and what style I want to play/listen to. However, here's a list of some of the most influential guitarists to me:
Jack White
Brian May
Jimi Hendrix
Kurt Cobain (yeah, listen to his work. It's not flashy, but it has its nice turns)
Django Reinhardt
Eric Clapton
...the list goes on. This was a quick list.
