Gamecube...
Try Metroid Prime. Really fun game right from the start. Also, Fire Emblem Path of Radiance is a good escape from the monotony of shooting people in the face.
A great RPG for the console is a game called Tales of Symphonia. Starts out a little slow, but the battle system is really great as you fight each battle in real time.
Xbox..
Not much here I don't think you already have: Halo, Halo 2, Forza (Racing Sim), Capcom Vs SNK 2.
However, if you happen to be a LOTR fan, then there's a good RPG called LOTR: The Third Age. A minus is that you don't play as any of the main characters, but the battles are again great in this game, with a sort of FFX feel to them: ATB on the side which is easy to manipulate, bosses who can sometimes get two turns to your one, ect.

it completely depends on your preffered sort of games.
for the 'cube...i'ld agree with path of radiance, but as a FE veteran, I think it's too easy. But either way, it's still a good tactical game. The Resident Evil series is pretty sweet...smash bros melee is a good game for the sheer amusement, just as the zelda series always presents a fun time. for flier games, try the rogue squadron series. the second one, rogue leader, was pretty sweet.
for the xbox...hmm. the halo games are fun, for a while, but they get old fast. I prefer Ghost Recon ((GRAW being the preffered one)). Beyond that, I really can't think of too many off the top of my head. The Elder Scrolls series is kinda cool, and Morrowind is on the 'box, but Oblivion is so much better, if you can get a 360. And if you don't mind the lack of multiplayer, or the utter shortness of the game, try Black. It's fun, and s**t blows up real well in that one....and Oddworld, Stranger's Wrath is a nice mix of FPS and third person brawler. Funny game, too.
Of course, all this pales in comparison to my fave xbox title of all time. The game is called Worms 4. it is hilarious. a bunch of little earthworms blowing each other to hell with comical weapons and shooting off witty zingers.

I play just about anything really.
For Gamecube, I have one of the Fire Emblem games and was eyeing Tales of Symphonia.
And now that I check, it is Path of Radiance. I
I've heard a lot of people say I should try Metriod Prime, I wanted to get a bit more input first.
As for Xbox.. I have a few games that I haven't really looked at yet. xD;;
I kinda inherited these from my brother. xD;; He got a 360 and I got the systems out of the deal. He had Halo.. But, I think he decided to keep it.
I've got quite a few racing games that he doesn't play anymore. I'm basically sharing those games with him.
But, thanks for the input guys. If anyone else has anything else, let me know. :3
