Well, you don't necessarily have to use overused movesets at all. In fact, with team preview, it's better not to use the common things. When they see what you have, they'll assume it's using a popular set. Thus, if you don't use a popular set, they'll be caught off guard and you get the advantage. And some gimmick Pokémon do still retain some value as the opponent may not know how to deal with them.
As for Zoroark, you can still play a crapload of mind games. In fact, it's a little more fun when they know you have it, because they know it's there but they don't know which one it is. Anything you send out might be the Zoroark, and they'll have to keep second-guessing their every move in case it is. They can never be completely sure. However, you want to choose something with some of Zoroark's moves, lest you give away its presence after just one turn. ie. Don't have it masqeurade as a Breloom and use Flamethrower.
The main thing it destroyed was lead Pokémon, since you can now use anything as your lead. You can still use a lead like in the last gens, but be aware that your opponent will likely recognize it as a common lead and send out a counter. I personally like the thought of it. Knowing the opponent's team allows me to set up a general strategy for the match, though I'm likely going to keep it unspecific enough for me to alter it depending on what sets their 'mons are running and which of mine they knock out. It's just a new way of thinking, really.
TL;DR: The team preview barely ruins anything. In fact, it normally adds more strategy than it takes away.

Well, I was referring more to the gimmicky pokemon anyway. They did lose some value. I don't know, but it was nice having Electivire on your team and coming in an an unexpected Thunderbolt. That won't happen much these days. Basically, Motor Drive, Flash Fire, Water Absorb, etc. are all pretty useless now. No one is gonna send those moves you way when they are expected. I guess they aren't completely useless though, as you can protect your team from those kinds of attacks to an extent. But, it ruins the surprise nonetheless.
I don't really care about Zoroark, so you guys can say whatever about him.
Yeah, leads aren't quite as useful when they can see your team. But still, you predicting I'm gonna use my Azelf as my lead could mess you up. Say you decide to use Crobat to counter it. (With Taunt and U-turn) I could start off with my Choice Band Scizor and can get a clean 2HKO with Bullet Punch. More likely though, you'd just switch anyway. But I guess you see my point. Though, seeing everything doesn't ruin the game at all. In my opinion, it's a pretty big change to it, but it's still just as good. We just have to think a bit differently, but it's not a big loss.

I got lucky quite a few times. Good game though, it could have been a close one had I not been so lucky
