Most dark and extra dark are bitter but some pieces like the ganache are not. They're just really really rich.

I prefer the sweeter stuff.

Steve Rogers unbitter dark chocolate? eek didn't know such a thing existed. I prefer the sweeter stuff. I shall correct myself. Dark is bitter yes, but in some cases the bitterness is drowned by richness. Make sense? But if you like sweet... Whoo Whoo...
