Russian chess needn't be explained. Essentially, we reworked how the pieces move (the queen only moves one square, and the king barely five at best, for example) to make it more likely. No jumping of pieces, either, since its to help mimic the effects of the battlefield.
Of course the way we play it, there's penalties for pieces lost that cost the player to do some action (depending on what you agree upon, it could be buying someone's meal in increments of cost, or for you really kinky people, striptease), so the idea of sacrificing a piece could also cost you a rather hefty price yourself.
It can be interesting, expesially with multiple levels. Artillery bombardments with the rooks are rather fun...

Its proportional. Meaning her victory needs to be more overwhelming than mine to even suggest that. Essentially, she'd have to own king, queen, a rook, bishop, knight, and three pawns to even think about that suggestion. A complete wipeout, essentially.
As I'm the one who invented the rules, though, its usually me getting to decide what to do with the POW.
