Rukia's 150 years old. Her birthday is January 14th. No, she didn't have her birthday during the series because the series started during the spring and a year hat yet to pass in the series. It's really interesting how time can progress so slowly in the fictional world.
Again: Ichigo is 16 since he started the series at 15; his birthday is July 15th; the Soul Society arc happened during the 1st summer of the series; and the Arrancar and Hueco Mundo arcs are supposedly leading up to the Winter War, which will be the first winter of the series.
