As much as I LOVE NaruHina and really hope that it DOES happen within the series, i'm going to be blunt for a moment.
It's only going to happen if Naruto stops being an oblivious (though adorable) idiot and realizes that he's got a sweet, beautiful girl who cares for him more than he could ever know.
Yes. Hinata is in love with Naruto. I'm certain of this, because what girl sees her longtime crush off, and then still has feelings for him 2.5 years later? On another note, what girl's feelings only get stronger during and after those 2.5 years?
Hinata does, that's who.
More to the point, however, NaruHina is only going to be canon if Naruto stops being so oblivious and realizes that she feels more than just a really good friendship with him. Of course, this is also implying that he feels the same. From what we see in the manga (because we all can dream, but manga canon is factual), he doesn't really see her as anything more than a friend. This could change; after all, it's been 2.5 years, Hinata's grown significantly prettier, and with all the training with Jiraiya he's gotten, Naruto may take an interest in big boobs, shyness, pale eyes and long, long hair. :3
This also depends on if Kishimoto-sama is a NaruHina fan. xD
As for the people who say Hinata couldn't love anyone more than just Naruto (because it's obvious from the one scene in the manga where she faints at first sight of him that she DOES, indeed, still feel VERY strongly for him), Hinata hangs out with Kiba and Shino more often than she does with Naruto. She's learned their good qualities, their bad qualities, what makes them likeable, and perhaps even loveable. Yes, it's very possible that Hinata could fall for either one of them.
In the case of KibaHina, Kiba has a personality similar to Naruto's. While it's true that Hinata could fall for him based on the similar personality, I think she's smarter than that. If she did fall for Kiba (which, I admit, I wouldn't mind, seeing as I also support KibaHina quite a bit), it would be because of the things she likes in HIM, not his similarities to Naruto. Of course, Kiba's a pretty good-lookin' guy himself. :3 I can see this happening, based on the fact that they're teammates and they get to know each other a lot better than Hinata with most other guys.
The evidence of how Kiba 'makes fun' of Hinata for fainting? It's a proven fact that in a lot of cases, guys show their affection for girls they like by teasing or making fun of them. Also taking into consideration that Kiba knows Hinata well enough to know when he can poke fun at her and how he can, it could very well be a sign of affection. It could also be a sign of friendship, but with what, exactly, he DOES say, I think there is a possibility that Kiba has feelings of more than friendship for her.
"Why do you always faint in front of Naruto?!" Was the general concensus of what he said, for those who don't know. :]
As for ShinoHina, I personally don't see any more than just friendship with this one. Others may dissagree, but I see Shino is rather quiet and would rather support his friends than become involved in anything romantic. I personally can't see Shino with anybody, to be honest. He's just that kind of character.

While they are cousins, they are also in a sort of an 'emperial hierarchy' situation, with the main and branch houses. Neji is a prodigy, and Hinata is the heiress to the main branch. Because Hiashi seems like the kind of leader who would prefer 'pure blood' over 'tainted blood,' it's quite likely that NejiHina could be canon, if that's what Kishimoto-sama thinks Hiashi would prefer. Hiashi may want marriages to be within the family, no matter how 'worthless' his eldest daughter may seem.
