I could care less if the hair stays the same...as long as its kool & I like it ^_^
One character that changes his hair [& i don't mean little changes] is Azusa from Hot Gimmick
I mean that guy dyes & cuts his hair everytime he's gone & comes back into the story xd
First auburn,then blonde,then blue & then orange.
Well,he's a model so his hair style changes alot which I think is kool.
Also Hatsumi cuts her bangs & stuff.

I think the 10th captains hair from Bleach is the best. Color and everything. Although there are many great hair styles.
The change to Hinata's hair was a plus too in my opinion.

In FMA, did you ever notice how Ed's got that little piece of hair that always sticks up out of his bangs? My sister and I laugh at that all the time. ED'S HAIR DEFIES GRAVITY!!!!!!!

I don't think the hair really matters but I do know some. I tried not to repeat and try to think of some others.
Sasuke (Naruto) - If I remember his hair changed when he was training with Kakashi. It grew longer.
Haruhi (Ouran High School Host Club) - Well her hair was long when she first joined, then she cut it because if gum? Does it count?
Kaoru and Hikaru (Ouran High School Host Club) - they dyed there hair pink and blue when they were pretending to fight.
Rei (Beyblade) - he usually has it tied up in a ribbon but then it's really long when he unties it? Dunno if that counts?
Masaru (Digimon Savers) - At first his hair was just hanging to his shoulder in the 1/2 half of the season and the 2nd 1/2 it grows longer and is tied in a ponytail.
Mitsuki (Full Moon wo Sagashite) - Usually black in 2 pigtails in her normal form and her hair changed a lot when she changes to Full Moon.

I dont think anyone said it but...
Is it me, or did no one say
Sakura and Ino from Naruto?
They actually cut their hair. I think that counts.
Oh, yeah. And in Shipuden, they pretty much all change their hair.

I remember Sousuke Sagara from FMP!:TSR had long hair compared to the first season, and Kaname cut it for him. 3nodding
In Ah! My Goddess! I noticed how Belldandy's hair recently became curved at the end. I don't really like it that way, though. sweatdrop
