おむすび
Omusubi (onigiri) 

材料 

rice cooker
240ml rice
salt
water
鮭(Sake、fish),梅干umeboshi,or any tsukemono
rice molder
海苔(sea wed)

It is very simple. there is no idiot in japan that does not know how to make omusubi. even a foreigner should have some idea.

before starting, any person i am thinking has called omusubi "rice ball", will have the steps instantly converted to japanese for everyone to figure out. i just find it annoying ^^ , besides, calling them rice balls is the most foreign thing you can do (seeing s the are only balls when the are shaped like soccer)

(also you should know now, i never use my hands for molding, i dont have time [if you dont knw, i make lucnh for everyone that live with me])

once rice is done being cooked, get salt and mixe with water, dip your hand in salt, and take out some rice. make some form of circular shape out of rice (make sure it is a little more than can fit in mold) now make push in your tsukemono「漬け物」, or sake[鮭」 (the fish) and seal up the hole left in the rice caused by pushing in the food. it is best to dip your hands in salt water again and just roll the rice around for flavour. now put in mold, take it out, and put on your nori. fortriangualr and disc omusubi, make square, for cylinder make square strip. mor animal shape, make eyes/nose/mouth. if you want, you may now sprinkle omusubi with furikake.

NOTE: no one says "itadakimasu" to mean bon appetit and such thing. when you want to say that at end of recipe you say "tabeyou ne" otherwise, itadakimasu is for when eating food.

(atsuyaki tamago)

heart This is not my most interesting food recipe, but to have an Obento you must have this in it.they are a type of square thick omlette, it is sweet and cold. you will enjoy it i hope!

材料 

(stuff to make food, i dont know in english)
heart 80ML dashi
heart 6 egg
heart 80 ML(65g) sugar
heart 350ML shoyu
heart 5 ML sake
heart 3ML salt
heart vegetable oil

heart tamago yaki nabe (square pan)
heart chopstick

heart Put egg and oil to side for now. now mix dashi,sugar,shoyu,sake, and salt in small pan and mae it hot until everything looks mixed into each other and the same. then let it cool(just take of heat source and put somewhere same temperature as house, should be 21 degree celcius,気温が20度) . mix in egg to to the mixture, but stir so not too much oxygen get in, it is supposed to be thick. now get out the tamago yaki nabe. turn on heat source and put on pan oil to prevent sticking(when the pan is ready).Put inot to pan 80ml of mixture.when it is cooked, cut into strips, and roll in to cute little omolette.

If anyone wants english measurements for the recipes, here they are. ^^
(I didn't put items that didn't need converting on the lists here, so don't forget to read the recipes first xp )

Here's the measurement for the Omusubi recipe:
240mL rice = 1.01 cup (about 1 cup)

For Atsuyaki tamago:
80mL dashi = 0.338 cups (about 1/3 cup)
80mL (65g) sugar = 0.338 cups (about 1/3 cup)
350mL shoyu = 1.48 cups (about 1 1/2 cups)
5mL sake = 0.02 cups (about 1 tsp)
3mL salt = 0.013 cups (about 1/2 tsp)

for most of the larger measurements, usually there is both mL and cups on measuring cups, but it's still nice to convert it with math. ^^;
Also, in the instructions, 21 degrees Celsius is 69.8 degrees Fahrenheit ((about room temperature))


The basic conversion of mL to cups is to multiply the mL by 0.004226.
(it's Liters to cups by multiplying Liters by 4.226)
(( Just for the sake of the smaller measurements:
5mL = 0.02 cups = 1 teaspoon
15mL = 0.06 cups= 1 Tablespoon
240mL = 1 cup = 16 Tbsps = 48 tsps = 96 half-tsps ))

was going to post this under alll about japanese food when i realize that it too much, so i make thread.

first, bento is japanese lunch box. it is arranged to be cute and have lots in it (which is why japanese people are 90% less likely to get cancer and other diseases)

i will here:

whee I went to my local grocery store today to see what their international section was like,... and it was pathetic. crying

I couldn't find
scream dashi (the fish stock stuff),
scream furikake (the dried fish flakes),
scream kamaboko (naruto or otherwise ... none),
scream any kind of pickles other than cucumber.

The only things I could find were nori, soy sauce, rice vinegar, and chopsticks... and spicy stuff like wasabi and pickled ginger... which I don't generally like anyway. xp

I'm going to try the mexican/asian market down the street tomorrow, 'cause it wasn't open today (labor day crying ) and hopefully all the good stuff will be there. xd

I got a bento box earlier in the summer for use in the up-and-coming school year. I took a practice run bento to work one day and my result was as follows...

I'd just like to note that I don't make rice very often because I don't have a rice cooker (I'm lazy. xd ) and I have to eat it all. I'm going to start sneaking it from work (Panda Express), tho' it is long grain. crying Other supplies I have are sauce containers and mini cookie cutters which are VERY useful for cutting shapes in stuff for bento usage.

Other than my total lack of rice usage, have any ideas for me? I generally keep pot stickers, shu mai (sp?), and edamame around in my freezer year round.

Most general Asian markets carry the stuff you'll need for the recipies. On rare occassions health food/organic stores will also carry many Japanese groceries because of the high demand from macrobiotic dieters. Unfortunately, if you don't live near a large metropolitan area, things may be rather difficult to locate locally. Also, they aren't widely advertised, so word of mouth or adventuring through new parts of town may be the only way to find a local market. At any rate, I wish you good luck. 3nodding

I know. International sections of grocery stores always suck. I can't go down to Chicago often enough though and I can't find any Asian stores around here. It sucks. xp
