Anywho, what form of jedi swordplay is best suited to a swashbuckling fighting style?
The closest thing to swashbuckling would probably be a Form II or Form IV.
Ataru uses the spins and twirls which we know, but Form II is really the only style which doesn't ask for the practicioner to use both hands on a regular basis.
Your makashi would be like fencing, like musketeers, and zorro, based solely on the parry and the reversal using a curved hilt.. But you could give a little blend to the thing and throw in ataru for some flashier moves.
