Brunch

Recipe Name: Mock Monte Cristos
Prep Time: 15 minutes
Servings: 4

Ingredients:

2 cups baking mix, like Bisquick
¾ cup milk
1 egg
6 oz each deli style honey turkey breast and honey ham, about 12 thin slices each
8 slices Swiss cheese
½ cup strawberry spreadable fruit or jam
Powdered sugar

Directions:

Heat oven to 400° and grease an 8x8 square baking dish.

Mix baking mix, milk and egg until blended and spread half of mixture even along the bottom of the dish.

Top with 4 slices of cheese, 6 each turkey and ham, and then spread with half of the jam to within ½ inch of the edge of the dish. Repeat with remaining cheese, meat and jam and remaining mixture.

Bake uncovered for 30 minutes or until golden brown. Let cool 5-10 minutes and sprinkle with powdered sugar.

Serve with a cold side such as fresh cut fruit, coleslaw or salad.

I am all about food. Ha! Of course I have a bajillion awesome recipes, and if there's room for more of mine later, I'll submit more. I picked something simple, but that I would've never thought of if I hadn't found the recipe. I have made it before, several times, and personally I use more jam, but I'm a little more indulgent then many people. I hope someone gives it a try!

I would so add more jam too and have some to dip those into. I like me some jam <3

Recipe Name: Treat Pie (Like Canned Treat/Spam/Meat)
Prep Time: 20 min lots of chopping
Servings: 4-6 depending on size served

Ingredients:

2 teaspoons butter
1 can Treat or Spam
1 can biscuits
1 can cream of mushroom
2 potatoes
1/2 onion
1/2 cup water

Directions:

Chop canned meat into small squares.

Mix with small square cut onion in big skillet and let brown in 2 teaspoons of butter.

Chop potato place in bowl and add water and cream of mushroom.
(My potatoes was under cooked might need to boil to soften it first.)

Mix skillet items into bowl once browned.

Pour into small baking pan.
(I used a 9 x 9)

Then cover with biscuits.
(I placed mine artistically. Just as long as you clump it into small ball forms.)

Dinner recipe
Recipe Name: Creamy Tomato Bisque (Soup)
Prep Time: 35 minutes
Servings: 4

Ingredients:
4 tablespoons unsalted butter
1 medium onion, finely chopped
1 medium carrot, finely chopped
1 celery rib, finely chopped
2 garlic cloves, finely chopped
3 tablespoons all-purpose flour
4 cups chicken stock or canned low-sodium broth
Two 14 1/2-ounce cans diced fire-roasted tomatoes, drained
3 tablespoons tomato paste
2 teaspoons sugar
1/4 cup heavy cream
Salt and pepper

Directions:
In a medium saucepan, melt 2 tablespoons of the butter. Add the chopped onion, carrot, celery and garlic, cover and cook over moderately high heat, stirring occasionally, until the vegetables are just beginning to brown, about 5 minutes. Sprinkle the flour over the vegetables and stir over low heat for 1 minute, or until the flour is fully incorporated. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil. Cover partially and cook the soup over moderate heat, stirring occasionally, until the vegetables are tender, 15 minutes.
Transfer half of the soup to a blender (or use an immersion blender) and puree until smooth. Return the puree to the saucepan, add the heavy cream and cook until the soup is just heated through. Season the soup with salt and white pepper and swirl in the remaining 2 tablespoons of butter. Ladle the soup into bowls, garnish with croutons and serve.

Appetizer
Recipe Name: Bacon Wrapped Jalapenos
Prep Time: 30 minutes
Servings: 6

Ingredients:
6 jalapenos
3 Tablespoons cream cheese
6 bacon slices
12 wooden toothpicks

Directions:
Preheat oven to 400 degrees or preheat an outdoor grill.
Slice jalapenos in half lengthwise, scrape out the seeds and membranes.
Fill each half with cream cheese. Cut each slice of bacon in half. Use a half slice of bacon for each jalapeno half. Wrap each one with a bacon slice and secure with a toothpick. Bake for 25 minutes or until done.
