Mostly, I stick to the canon ships. Its kinda hard to break-up the canon pairs when they're all soul-mates or destined lover, or former lovers from past lives, etc.
Although, I can't stand Chibiusa/Helios for some reason. Mostly just because I don't really like Helios.He's more of a damsel in distress than Mamoru! For Chibiusa I prefer shipping her with either Hotaru, an OC (rarely), or a character from a different manga/anime.
Also, for another non-canon ship, Galexia/Sailor Cosmos.

The Knights that I have made over the years were all intended to fill in those spots for the female senshi that never found anyone in the anime. [Or loved and lost as the case may be.] The Knights do have links in the Silver Millennium, some play greater roles then others, some find love with their princesses, others love from afar... and in one case he has a really bad case of a one sided love.
For the sake of filling it out here's what the characters were named and the Senshi they are supposed to one day meet again.
Developed Knights with their pairings
Ite/Makoto
Kirin/Ami
Akodo/Rei
Akuen/Setsuna
Sendo/Hotaru
Undeveloped Knights with their pairings
Yochi/Haruka
Enkai/Michiru
I've toyed with the idea of making one for Venus, but she did reject her knight in the manga and watched him die... so I'm not sure it would be really justifiable to say that she would get a 2nd knight. Nevertheless I do have an idea for one, but not sure if I would get a chance to follow it through.
Tempting as it would be to develop the Uranus or Neptune knights, I don't think they'd really ever end up getting used. [Since it's hard enough it seems to get an rp with a cannon senshi and one of my knights going.] Although if anyone is interested in starting one up I would be game.

I went extra-stellar and shipped Queen Serenity with Dr Who, it was a fun character storyline.
Then I had some more fun and went with a really fun variation: Seiya and Haruka
