You don't know what to write? Just say something along the lines of:
Each affinity has a broad spectrum of uses and weaknesses. For example, an earth-affinity might grant you power over plants while making you vulnerable to fire, or you can shift the very ground beneath your feet to create a fortress or to be used as a weapon while water will quickly wear you down. The affinities come with a variety of uses and powers, so when choosing your affinity, make sure you think hard about what your character would be weak against.
Something like that.

Oh, and I edited Lyra's profile, I'll be putting it up now~I updated it and shoved your paragraph in among adding a little other stuff because I am lazy. Well, you can still call me Scy or whatever you want. I'm just surprised at how many names people have come up with. *wonders if a different username should have been chosen* Yay Lyra. And now Aiden joins the fray as Daryle's trusty steed..or not?

I didn't think Scythe would get all rage-face, but I always feel I should say that if I'm going all: "DO THIS, YOU SUCK."
Which yeah, you don't suck Scythe.
Magical fire is always tricky, and if you draw the oxygen away from too close, the fire is likely just to follow it straight to you. Besides, you have to worry about being blasted with fireballs then. Draw it from too far and the rest of the room will feed it instead. Sure, if the fire is too big then it can burn itself out easily, but who wants to risk that?
Earth can fairly easily redirect water if used correctly. It'll block ice, it can act as a barrier, and it's more durable than most frosty structures. Though, water can get into stone and dirt and explode. Stone is obviously much more difficult to do that to. Plants however, can be slaughtered by water, now that I'm thinking a little more clearly. Just taking the water out of them will actually arm the water mage better as well. Also.... METAL. Yay.
And yeah, most of them are pretty versatile. Armand forbid you start combining them with other mages. And I think I had Isaac use the blood thing in the last one. Obviously I won't be using it on any actual characters, unless some little upstart is interrupting class after the students are aware of the wonderful wonderful magic. And even then, they simply won't be able to move. XD
EDIT:: Because I forgot to say before, I'm sticking with Dutch Boy.

So basically it all boils down to how skilled you are and how limited your imagination is. Obviously the students won't be doing any high level magic, so I don't think there's any need to further elaborate on the magic section in the Rules & Background thread. Teachers, however, will be able to do such high level magic... As clearly demonstrated by Mr. Isaac over here. BLOODBENDING.
