You don't have to roll for height, though you certainly can if you'd like it random.
Skills... you get a certain number of skill points, and you spend them on being awesome at stuff. You're a ranger, so you get a fair number of skill points.
Generally, it's better to max out your skills than to spread the points around, so you should pick six skills, preferably from your class list, and put a rank of 5 on each.
This number is modified by ability scores and then when you need to roll a skill check, you roll d20 and add the modified number to it. So if you have 5 ranks and a +2 modifier on a skill, then you add 7 to whatever you roll, so you'd get something from 8 to 27 for your result rather than 1 to 20, which is good, because generally when you make a skill check, you need a certain score after modifiers to make the check and use the skill successfully (start a fire, pick a lock, talk a shopkeeper into giving you a discount).
