As far as the sphere goes, I tend to be prickled by ones that sound modern, even if they aren't. Coffee has existed since before the Middle Ages so it meets shop requirements to be a viable sphere. However, I think calling it something like Senshi of Coffea (the berry that coffee is derived from) would sound better. Since Coffea would involve the beans as opposed to the coffee product derived by them, her casting acting could involve smashing them or something. I don't know. These are just my thoughts. There is nothing wrong with coffee as a sphere; I'm just waxing on about it.
Instead of going with rounds/posts for your duration, I would just list the amount of time instead.
I think the idea of her attack being an agility/alertness buffer is a good one. The dice roll to determine which "round" the muscle tremors hit in will probably be too complicated. You should probably just leave that up to other players to determine. I think her eternal attack is very cool!

I would delete this as it doesn't follow the rules for senshi magic. What she does as a civilian should have no bearing on her powers when in henshin.
edit -- Whoops. Ryu pointed out that I typed 'cacao' which actually makes chocolate, not coffee. The dangers of critting late at night! Coffea is actually the source material for coffee. SORRY. But again, the 'Coffea' v. 'Coffee' thing is really just an opinion of mine for you to consider!
