A lot of people don't like matzah plain. I don't enjoy plain Pesach matzah, though because I'm Mizrachi, I can eat egg matzah or matzah made with fruit juice instead of water, and those are delicious. Mostly, though, I just get my matzah quotient fulfilled by making matzah ball soup, matzah brei, matzah lasagna, matzah spanakopita, and so on. I don't eat it plain except at seder, when eating it plain is a requirement.

I enjoy matzah ball soup, but I like to change it up a bit and do it differently from what's typically expected. I do make chicken soup with matzah balls, but occasionally I'll toss in a little tomato paste and some Italian herbs and spices (or if I'm in a big hurry, I might just dump in a cup or two of pasta sauce). Or I'll use the broth after making za'atar chicken or chicken with ras-al-hanout in the crock pot instead of "plain" broth with just salt, pepper, and vegetables to add the flavors, and thus turn it into a Middle Eastern or African dish with just the matzah balls themselves to bring Europe to mind.

Hey, I never said I didn't like plain chicken soup with matzah balls. I just said it's not the ONLY matzah ball soup I like, not by a long shot. Deep-fried matzah balls are popular in the South (US), often served with gravy, though not usually for Pesach. I like to do a different matzah ball soup for every year's seder, but there'll always be matzah balls there. Mine are generally vegetarian, actually, since a lot of vegetarians come by me for seder. In fact, I don't even HAVE any meat Pesach dishes, just dairy and parve. Yeah, I know, I'm a weirdo. 4laugh

Behatzlacha-S Ketchup and Mayonnaise?? I draw the line at liver. I once ate like 9 of them without any water and cemented my mouth shut. xd You ate 9 Matzot and cemented your mouth shut? eek Alright, I'm gonna panic every time I even see unleavened bread now. My whole Pesach will now be celebrated with a new color of horror.

No problem.
