One of my favourite dim sum is the stuffed rice noodles. Unfortunately, I couldn't remember the details on how to make one because... I was only 10 years old when my mom last made them. All I remember something about chopping the raw rice into the blender followed by blend and puree (with water). I wasn't too sure if she used the cornstarch or not but I remembered her steaming them with the wok for a couple of minutes. It's amazing that how much time to make them and how much time you eat them.

@Lamb Sweet!! i always need a good fried steak recipe i love that you have thyme in it (though ill cheat and use hand harvested Sicilian Sea salt in place of kosher salt im a total sucker for good sea salts which reminds me i need to get more soon xp ) those look soooo good right now too i haven't eaten breakfast yet and now im craving fried steak biscuits grits and gravy

@Fiery ooh that sounds good i will have to see if i can find a recipe that sounds right and post it here for your inspection

There is a wonderful French place in West Palm Beach, Florida that has the most amazing tarragon dressing in the whole world. It's very sweet & tangy, really good even on just a piece of nice bread.

I'm still working on a recipe for it, but it's soso amazingly good.

Double Chocolate Cupcakes

Batter
- 1 stick of unsalted butter, softened
- 1 1/4 cup of sugar
- 2 eggs
- 3/4 cup of all purpose flour
- 1 tsp. of baking powder
- 1/4 tsp. of salt
- 1/2 cup of unsweetened cocoa powder
- 1/2 cup of whole milk
- 1 tsp. of vanilla extract

Chocolate Buttercream Frosting

- 1 stick of unsalted butter, softened
- 1/2 cup of unsweetened cocoa powder
- 4 cups of confectioner's sugar
- 1/4 cup of whole milk
- 1 tsp. of vanilla

* Preheat oven to 350 degrees Fahrenheit. As your oven is preheating, you can start on your batter. Make sure to start with your wet ingredients & then move on to your dry. It makes a lighter, fluffier cake this way. smile

* Portion the cupcakes into cupcake liners about 2/3 of the way & let bake for about 20 minutes or until a toothpick comes out clean.

* When you are making the frosting, it is very important the butter is softened so it is easier to incorporate the other ingredients. Add butter, vanilla, & milk first, then slowly add the dry ingredients to avoid a huge mess. xD; Beat frosting on a medium speed for about 3 minutes.

And here is my finished product!

@Camwen- OMG! THATS WONDERFUL ^_^ Im so happy you liked it...I feel so good when people eat something that I try to come up with and like it! I am so hard on myself when it comes to cooking andI go through a lil sad state when something doesnt turn out right sweatdrop

Hm...Heres a classic recipe for you Banana fans out there! This recipe does require u deglaze the pan when the liquor is added! Not sure what that is...Well if not, that means there will be flames coming from the contents of the pan...bottom line.

Degalze-to swirl or stir a liquid (usually wine or stock) in a saute pan or other pan to dissolve cooked food particles remaining on the bottom;the resulting mixture often becomes the base for a sauce.

Bananas Foster
Yeild:2 servings
1 oz Whole butter
4oz Brown Sugar
1/4 tsp Ground Cinnamon
1 fl.oz. Banana Liquor
2 Bananas cut into quarters
1 fl.oz White rum
2 Scoops Vanilla Ice cream

1.Combine,butter,sugar and cinnamon in saute or flambe pan. Cook over low heat till the sugar has dissolved.
2. Still in banana liquor and then place bananas in pan. When the bananas slightly brown add rum CAREFULLY to pan...REMOVE PAN FROM HEAT BEFORE DOING THIS.....be careful not to splash near flame!
3.Continue to cook till rum is hot and CAREFULLY tilt the pan to ignite the rum. When flames subside, lift bananas out of pan and place 4 pieces over scoop of ice cream. Spoon some of the sauce over ice cream and serve immediately ^_^

I quite like cooking, but I'm a bit hit and miss. My flatmate likes it, but then perhaps she's being polite... wink

I absolutely HAVE to make that banana recipie sometime!

Here is a nice recipie for using up onions.

ONION SOUP

Ingredients:
Four large onions
A few tsp of vegetable bouillon stock (not gravy!!!)
A kettle of water
Sugar
Olive oil
Pinch brown sugar


Chop all the onions and fry them in the olive oil until they caramelise. Add a bit of sugar and coontinue. Then put them all in a big saucepan and simmer with the hot water and stock plus a bit extra olive oil. Do this for about 20 minutes, then serve hot!

This serves about 4 people and makes a whole meal if you serve it with onion buns or scones, or bread rolls. I'll put the onion bun recipie up when I next phone my mother, as I can't remember it!

@ missa & cam love the recipes keep em coming and with that heres a bread machine recipe for pumpernickel im making as i type

Pumpernickel Bread

* 9 oz water
* 1/4 cup dark molasses
* 1 tablespoon margarine or butter, softened
* 2 cups Bread Machine flour
* 1.25 cup Rye flour
* 2 tablespoons cocoa
* 2 teaspoons salt
* 3.5 teaspoons regular active dry yeast OR
* 3.5 teaspoons bread machine or quick-acting active dry yeast


add ingredients in order keeping the yeast away from the liquids

Bake on Whole Wheat cycle 1 1/2 pound loaf setting
Ooh, I love making bread, unfortunately I use a dough hook and some loaf pans rather than a bread maker... Still, this sounds delicious
