Eating a lobster pre poached in a fumet/vinegar/mirepoix mix and then completely poached in clarified butter and tarragon.
Oh and it being cooked by myself.
It was almost gasmic.

exsisto verus Eating a lobster pre poached in a fumet/vinegar/mirepoix mix and then completely poached in clarified butter and tarragon. Oh and it being cooked by myself. It was almost gasmic. You know what. I'm sad.
You know how bad I've been dying for some seafood over here?!
The closest I'll ever get to a lobster here is Red Lobster and to be honest...
It's nothing compared to East coast seafood.

The closest I'll ever get to a lobster here is Red Lobster and to be honest...

sad lol. East coast for sure! Guess I shouldn't mention we also cooked seared scallops, wine sauteed mussels, glazed oysters, and clams in a bacon/wine/tomato reduction. Haaa.
