Since the Fate universe came from a Visual Novel fighting game hybrid originally, there are actually 3 canonical plot paths. The anime you watched follows the "Stay Night" path (focused on Saber and Glilgamesh), the movie Unlimited Bladeworks follows the Unlimited Bladeworks path (focused on Shiro), and the new FSN anime will follow the Heaven's Feel path (focused on Illya and Rin). What's interesting is that the Shiro from the Stay Night path ends up becoming the Archer of the Unlimited Bladeworks path. Conversely, the Shiro from the Unlimited Bladeworks path becomes the Archer of theStay Night path.

On F/SN: Is this cannon, or is it theorized? I am not sure that I am willing to commit Shiro to the level of "epic hero" required to be a servant. Furthermore, the Grail always summoned up heroes from the past (including one fictional). How could it summon up the spirit of a person still alive? It doesn't personally bother me, but the logic does not make sense in at least the latter issue.

Yes, this is canon. The grail exists outside of time, and perhaps the translation you saw or their usage of the word "history" threw you off.
Note that the link above will talk about a lot of over-arching nasuverse (the overall setting for all of Type-Moon's works) and stuff having to do w/ it, so expect a ton of terms never mentioned in the show.

neutral I can't say I agree with that choice, but that is just a choice. The idea of taking a main character/master and making him an epic servant leaves a huge gap to deal with. Perhaps I just am not attached enough to Shiro to be excited about that. Meh.
Let me clarify: I don't like Shiro's personality in FSN. I do like Archer's personality, since he's, generally speaking, a more mature version of Shiro.
Random members or Magni's children. Hmm...
