Pinkie's been chosen as the Main Host already, I think. Co-Hosts are room hosts.

Actually that's not quite right. Your right in that there is only One main host. Then she will choose a secondary host in case anything happens to her.
There are also Room hosts. The Main host (and secondary main host i guess) picks them. There should be 5 or 6 of those depending on how many rooms there will be. Unless they will be doing 2 Room hosts per room then double that.
The Room hosts pick their Co-hosts, the ones who work under them for each of their specific rooms, helping with games and contests or whatever,
Then the room hosts also pick official roleplayers (back up to co-hosts) to play specific roles for the room.
However! I don't think any of that has started yet, as pinkie was just picked as Ball host, the theme isn't decided on and the room numbers are confirmed. Give it so time and it will all happen. There will be announcements when it is time i'm sure. Then you can apply for room host, co-host, whatever you want.

How do you think we all get here. That's in the secret handbook every ball host receives after they get the job. That's why pinkie's been quiet, she's studying techniques. I was a Room Host once, they hint at you that you have to bring in more people to further their goals. Next thing you know...BAM AURB is running gaia. Then BAM it has it's own country. Until finally, BAM...the world. Dun dun duuuuuuuun.
