I wouldn't omit the salt. It's not very much and it's kind vital to the process.
Vital Wheat Gluten is easier to find than you think, and it'll be in the aisle that has the flour. I think even my dinky little grocery store has it. It's surprise me that it's be hard to find in a rural area because...well what's more rural than home baked bread?
Yeah, you set the pan with the water on a shelf lower than the bread. It keeps the bread from getting all dried out and hard when you bake it. Roasting pans are good for that, you get get a disposable one and just reuse it. It's not like you'll be roasting in it.

Poor Brian. My grocery list is going to be a little big/expensive this week, but I love shopping at the "high end" grocery store. Of course, after we get some things there, we go to the Walmart across the highway and it's like a culture shock. Nice grocery store has soccer moms, well behaved kids in school uniforms or friendly elderly people who hold conversations with you in the pasta aisle and the employees are friendly and the produce section is so pretty and fresh. Then you go to walmart and it's a bunch of rednecks wearing pajamas for pants and slippers for shoes, screaming at their dirty kids who are hanging out of a cart. The produce section smells a little like rotten fruit and many of the employees could care less about helping you.
Produce always costs more than other stuff and the list is going to be heavy on produce this week. I want to try this bread and I also want to try some smoothies but sort of wondering if I should do that since fruit=sugar? I'll probably also get one of those big, aluminum roasting pans that are meant to be disposable. I've finally convinced Bri to try the entirely whole wheat pasta. Been trying to convince him for a year and all I could coax him into buying was the barilla plus which is sorta halfway between whole wheat and regular. I just wonder now, how are you supposed to eat out when you're watching this kind of stuff?
Oh, there also seems to be a lot more whole wheat recipes on that site. I'll have fun picking through them although the first one I clicked on was asking for agave nectar (whut??) thanks for the link and info, Selina heart

Agave nectar is a sugar replacement. It's made from the same plant you get tequila from! It looks like thinner honey, comes in a squirt bottle. Natural sugars and processed sugars tend to have radically different consumption amounts, and between fruits you get wildly varying amounts of sugar. 1 apple? 13g. Same amount of raspberries? 5g. For the water bath, if you're not setting what you're baking directly into the water bath as you would a cheesecake or similar, don't get too hung up on the vessel (even then, it's only important that the pan you'r paking in can fit into the water bath). A roasting pan works great, but a pyrex baking dish, or even a largish bowl will work for the purposes of bread baking.
Also, agave nectar is awesome.

I'm back from the store with goodies! I got the whole wheat white flour called for in the recipe, the roasting pan, yeast (the kind I already has was the fast acting) and I did find the vital gluten. The high end store didn't have it, but Wal-mart did. I couldn't believe it! Also picked up frozen strawberries, whole wheat Boboli Pizza shells, whole wheat pasta, new summery colored novelty socks, Season 2 of 30 Rock AND I went to Micheals and found double pointed knitting needles in sizes 4, 5, and 7. Huzzah! When I was pulling out an old notebook to write down what I needed for the bread recipe, something fell out. It was an old Gaia cash card I got last year for christmas from the office. I thought it was lost forever! I promptly redeemed it and got myself a compass and an imaginary friend. Waiting for the whole wheat boboli to cook for dinner. It's been a pretty decent day even though it's depressing to see all the things you can't eat. **runs off to start the bread so it will be all ready for baking tomorrow** *edit* Bread dough is rising. I tasted the dough and it's super salty. I hope that stuff distributes better once the dough raises. I used 3/4T like it called for which was 2 and 1/4 tsp equivalent **edit 2** Here's my bread dough with about 45 minutes left to go for the setup. I hope it rises a bit more! Mmmmm future bread

Apparently, I have become the living embodiment of the 80s. Last time I went out to the club, everyone was telling me I looked like Annie Lennox. I went out tonight, and was told I look like a young Boy George. Apparently I have the whole androgyny thing down.

So my street is on fire again, or rather, right across the street. I took video! You can find it here, I made a playlist, there's five videos. They were all taken from right in from of my apartment building. McMahon's Irish Pub is kitty-corner from my apartment building. We're almost on the corner, there's one house and a small mechanic between us. I've been there a few times with Kitty (who has a now worthless $30 gift certificate), the food was ok. They had karoke and bingo and trivia, mostly the 40-somethings went there. It used to be the Poodle Club, which I despised. The only time I went there I found a fly in my drink. You don't really think that happens but it did. New management improved the place significantly. At about 6am I smelled a lot of smoke, then heard a ton of sirens and the sounds of breaking glass. And lo and behold, here's what I saw. As of 8:30am it was still going, it's been half an hour since but it's so thick with smoke outside that I refuse to venture out again. And I talked to a reporter from the Strib. They used my photo in their article.

OMG! Yay to Finished BreadThis is a closeup, the loaf is pretty small but I got 8 small pieces from it with another loaf's worth in the fridge. I think next time, I'll use a bit less salt. From what I calculate, this bread is over 3x saltier than commercial bread and that won't do. I'm about to go in there and mix a fresh batch but I don't know how much I can reduce the salt without messing up the bread. Other than that, it's great. It's very tasty, soft and mmmmmmmmmmm Thanks Selina! heart **edit** Wow, there were deaths in that fire? That is so depressing. gonk

I'm going to bet that it was a typo in the recipe and she wrote "3/4T" when she meant "3/4tsp," which sounds like about the right amount to me. Bread recipes usually call for between 1/2-1tsp of salt, very rarely more.
Glad the bread turned out so well otherwise!
Meanwhile, the mayor has been walking around our neighborhood talking to families. I'm at the studio right now so I'm not privy to this, but the Strib is writing about it. I actually ended up talking to some of my neighbors for once. They're not terrible people, they're just annoying. Although the big noisy dog from upstairs turned out to be really adorable. Many people are also now using my first youtube video of the fire as it burns. There was a guy from WCCO who claimed to have been there since the start of the fire but I'm going to bet he was lying, since the reason everyone is using my video is that no one else has pre-sunrise footage, when the fire was at its absolute worst. Ironically, he's the only one who turned down my offer of the .avi file.
I'm also really sick of everyone asking me if I'm getting paid for use of my photos and videos. No, I'm not. If they offered money I would take it, but I'm not going to ask. I was posting all of this stuff anyway, why shouldn't they do as well? I talked to one reporter at the scene and emailed him five or six of my better pictures (which I'm getting credit for), and sent out the original .avi to whoever asked (and am getting credit for that as well). It just makes me a little sick that the first thing people want to know is how much money I'm getting for witnessing a fire whose death-count keeps rising.
