Like Frostblaze said, it's mostly the player. But I would think demonology lock, holy priest, prot warriors, retri pallies, balance druids, combat rogues, and restro shaman are the only ones I can think of are the most oddball classes to deal with simply because people don't play them much or they are obligated to do alot of things.

Demonology for locks is just +survivability, if you're gonna lvl your lock go affliction.

Despite what people may believe, I actually found leveling a holy priest to be rather easy. However, I just now hit 67 and am just reaching the part where I can't level as decently anymore. Most mobs in Outlands either take too long for me to kill, or basically mob me all at once leaving me with no viable way to CC. PVE wise, Holy priests are medium in difficulty for leveling; all you really need to do is find groups for instances and instance your butt off. Depending on the group and how great your gear is, you can find yourself just popping renews on everyone in your party and just sitting back and relaxing for most of the pulls and boss fights.
Tanking warriors are extremely hard to play well, especially if you're trying to tank more than one mob at a time. There's really no great way to focus the attention of all mobs on you at once without spamming either Thunderclap, Demoralizing Shout, or Cleave (if you're desperate). One small mistake and everyone in the party blames you. It's not the fault of the mage who's deciding to Pyroblast everything in sight, but yours because as the tank, you're supposed to be the king of soaking up all the aggro.
Not to mention, out of groups-wise, it takes damn near forever just to take down one mob. gonk

A breack down on how I feel when it comes to grinding the classes. listed easy to hard.
easy to lvl
-hunter, after lvl 10 its easy street -warlock, dot fear nuff said -shammy, got to love those totems -mage, mass AOE spam -druid, need tank, healer, more dps no problem -pally, when the going gets tuff, bubble hearth -priest, you may think you awesome as a shadow priest till your forced to become a heal bot for your raids -rogue stealth passed all the har dwork to get to the peoepl that need to be killed. get in trouble.. VANISH... -war You may hae awesome power but without a healer your not much you are curesed to raid for all your life
hard to lvl

Neh, as holy priest since lvl 10 (currently at 45) I can't say I've found it really difficult. Although this is also my first and main character, as I never seem to play my lock alt. I just don't grind on my own, and haven't in ages. If I need xp, I find a group and do some instance runs. Or the groups find me, as the case tends to be.
So not too bad. Battle grounds are a whole other thing though.

Lol combat rogues are everywhere, I am literally the only lvl 70 non combat spec Ally rogue on my server, granted it is one of the newer ones, but there are loads of them and Combat is really easy and boring imo, I a SStep rogue and I love it, quite difficult to PvE with tho sometimes.

Warlocks have a hard push, but once you get a pet to solo with and a rhythm of spells going, it'll get easier.
The 'Best' lvling spec is affliction for quick and easy DoT damage. Warlocks fall short in the Burst DPS destruction to a mage, and demonolgy takes forever until you get around level 40 for the better Talents.

warlocks are realy fun to lvl for me and realy good solo. I do allto of solo farming in DM theres a cpl places wher eyuo can basicly have the mobs run aroud in cirlce while to dps the crap out of them. (ex: in DM at the large steep the "hand rail type stone on the large sair cases you can get on them and the mobs will stay on the steps bellow you. from time to time they may run down the stars to come up the "handrail stones" but you jump down go to the other sides hand rail sotnes and wait for um to come back.
