Just depending on what is your favorite to do or what is your best.
mine favs:
ATD (short for attack to defend) surprised verhead throw and flying kicks
kicks:sweep kick and axe kick
strike:i would have to say a neck chop or neck punch
hold/jointlock:it's one of my own but you grab one arm and while holding it you slowly have your foot on there back while causing the tissue to bend and snap then once it stops you do a strong kick totheir spine which completely disslocates the arm i don't know what to call it but one time i almost dislocated my friend deon's arm when i was teaching him it.
roll:idon't really do rolls but i guess i would say a sideroll

I don't really plan on getting in any death-duels in the near future, so here's my list.

I don't really have a favorite attack to defend against. I'm not very good at blocking in a practical situation anyway because I don't have a whole lot of sparring experience.
My favorite kick would have to be the Dwi Ahneso Pahkero Cha Gi. Translated, I guess that could either be called a back inside-to-outside kick or a spinning axe kick.
Favorite striking technique... Hmm... Probably Hwa Kook Yong Kap Kwon, which is a weird double back-hand sorta thing.
Favorite hold/jointlock? Most of Soo Bahk Do is focused on striking techniques. One of the self-defense techniques is pretty nifty for this, though. You crank the person's arm around in a circle and drive them down to the ground with their shoulder on your knee. Ho Sin Sool, two-handed wrist grip Il Ban.
This may just be the way my instructor teaches it, but there's not much focus on falling or rolling, either. I was in Judo briefly, though, and I like the forward roll I learned there.
My favorite part of Soo Bahk Do is the hyungs/forms/kata/whatever. They're fun.

I like to defend against hand work, and kung fu boxers (not just swings to the head).

I wouldn't know what to say my favorite kick is, because my favorites are the ones I've come up with myself. One I like is kind of a sideways axekick/arial cartwheel. The kick starts behind me and rotates 3/4 of a circle in the direction I was facing. That, or a good scissor kick. Man those are fun.

My favorite strike is just a good, simple, centered palm to the chest, or a forward elbow/forearm strike.

Favorite jointlock? I don't do a lot of locks/holds but my favorite punch counter is called 'monkey behind the trees'. When a punch comes into your face, you step aside, break the elbow, trap the arm, and deliver a couple of blows to the head/neck. You keep their arm all the way to the ground, break it again, and make sure they're completely out with another good strike to the head or chest.

Roll...umm, a good, home-baked wheatbread roll.

The best part about my discipline is versatility. I don't practice one style, but practice adapting to absolutely any situation. I incorporate TKD, chinese styles, muay thai, sword techniques, animal forms, soft styles, boxing, and a bucket full of other odds and ends into my training. It's all there. I might not be especially strong in any one situation, but I am strong in almost any situation.

For a few people, I'm not saying give up what ever your doing to work on your favorite's. I'm just saying whats the best thing you do in each catagory, or what do you feel most comfortable doing. I'm not saying, "Ok spin kick is your favorite kick, so practice it day and night until you can take some one's head of instead just breaking their jaw."
All I'm saying is if spin kick is your favorite kick, good for you, but keep your mind on all aspects of your martial art. Those... Were just harmless questions. 3nodding
