I'll agree with the majority of you with Waluigi Pinball. It rules.
Baby Park is really fun when you're playing with multiple players. Tick Tock clock has a really good design. I really like Bowser's Castle as well (special cup)

Music: Desert Hills/ Waluigi Pinball(Wario Stadium has the same music)/ Airship Fortress/ Banshee Boardwalk(N64 version)
Level Design(looks): Yoshi Falls/ Cheep Cheep Beach/ Desert Hills/ Delfino Square/ Waluigi Pinball/ Tick-Tock Clock/ Airship Fortress/ Peach Gardens/ Bowser Castle/ Moo Moo Farm/ Luigi Circuit(GBA)/ Banshee Boardwalk/ Yoshi Circuit.
