A Song of Ice and Fire, George RR Martin Lord of the Rings, J.R.R. Tolkien Chronicles of Narnia, C.S. Lewis
But really, before you go putting Twilight on a list of must reads, you should really read Ice and Fire. It's not as touchy feely, but it's probably one of the best books I've ever read, and I've read a lot.

Tuck Everlasting Natilie Babbit (In my old school every sixth grade reads it) Harry Potter series J.K. Rowling Eragon series Christopher Palini Indian In the Cupboard series Lynne Reid Banks Narnia C.S. Lewis Into the Wildwood series
(Did not finish HP series yet, did not start to read Eragon yet or Into the Wildwood, but I will. I just know that they're Science Fiction and Fantasy. I will read them though. I have them in my crawlspace. My sister read them and said they were good, so my mom didn't buy them just for show.)

Heh... I need to see some of the original names from wiki...
Fantasy:
Walter Moers, I have read dozen of these, I recommend these to everyone who like humor, fantasy and good storytelling in the same book. See the nearest library for his books. He's German, so his books are more common in Europe. My personal favourite.
J.R.R. Tolkien series, inc. LOTR, Silmarillion, Hobbit and dozens of others I haven't heard.
C.S. Lewis, Chronicles of Narnia.
Eddings, pretty much all books.
Cornelia Funke, Inkworld series.
Asko Martinheimo, Tuhkanaama ja Taivaantakoja and Jäähisten Mahti. If you want to read these, better learn Finnish first.
The Tales of King Arthur and the Knights of Round Table. I have read 300 pages of these in Finnish and can tell the storyline of the book without even seeing the cover.
David A. Gemmell, The Legend and King Beyond the Gate.
Christopher Paolini, Eragon trilogy, even if mostly like mixture from LOTR, Narnia and Scandinavian languages, he's pretty good at storytelling.
J.K. Rowling, Harry Potter. These books actually ain't fantasy, but anyhow.
Susan Cooper, the Dark Is Rising.
Philip Pullmann, His Dark Materials.
Bram Stoker, Dracula.
Sci-Fi:
Douglas Adams, The Hitchhikers Guide to Galaxy, whole serie. The latest books I have read.
George Lucas, Star Wars saga. Also many continuations written by other novelists.
Philip Reeve, Mortal Engines quartet.
Vernor Vinge, A Fire Upon The Deep.
Michael Crichton, read just the Lost World, seen two first Jurassic Park movies.
Others:
Alexander Dumas, if you don't know him, better stop reading, and also stop watching TV. You should also get off Internet. Search wikipedia for him.
Robin Louis Stevenson, The Strange Case of Dr. Jekyll and Mr. Hyde, Treasure Island and couple others.
Agatha Christie, Poirot.
Sir Arthur Conan Doyle, Sherlock Holmes.
These are what I think everyone should read, also maybe in the original languages, as they often are better that way... well, maybe not the Harry Potters.

Okay since most people... even well read people... can't seem to follow directions I have composed a list of all the books so far. Don't get caught up in Twilight being # 2 while you're classic is # deep down. I did it in order of posting only. Remember this is a top list (and a large one so odds are its just going to be every bloody book out there) not a ranking list.
Please don't list everything by X author this is a book list not an author list if you want all his books listed then don't be lazy, and type them all out. Also I kept all the books of a series together to save space.
1. Harry Potter 2. Twilight 3. His Dark Materials 4. Narnia 5. 1984 6. Animal Farm 7. Farenheit 451 8. The Moon is a Harsh Mistress 9. Stranger in a Strange Land 10. Neuromancer 11.
