It's all with your taste....
For my part, I really love FullMetal Alchemist, DeathNote, Fruit Basket and Blood +.... Kenshin is good too! (Old but good sweatdrop ) blaugh
But! If you like violent things, I heard that Berserk was a good one... sweatdrop

Depends what kind of manga you like,
Mahou Sensei Negima! is a great comedy/action/romance manga, but its echii
Highschool of the Dead is a tounge in cheek zombie manga but VERY VERY echii
Air, Kanon and Clannad, are all very sad romance mangas
Spiral: Suiri No Kizuna is a brilliant 'thinking manga' as a friend calls it
Gunslinger girl is a very good Action/Drama manga
K-On! is a good comedy
The Vanashing of Yuki-Chan Nagato is a good romance/comedy (but you would have to see The Melancholy of Haruhi Suzumiya to fully get it)
Yotsuba&! is hillarious
Love Hina is a good echii romantic comedy
Kashimashi Girl-Meets-Girl is a good romantic comedy but it is Shoujo-ai so definently NSFW

Hmm....well if you want a good anime or manga, try out Shugo Chara!
It is still ongoing and it is great.
