This is happening there not only in pubs/bars, but also in fancy restaurants wink . Does it serve a purpose or is it just for show? isnt that purpose enough? c'mon, what more do you want?

It obviously serves a purpose, most likely it's to get bubbles in the drink (I'm sorry but my Spanish is not so good to ask about it and I somehow didn't find Cruor in my luggage). Though it's a good show for those not familiar with this habit, like tourists.
