So, I've come to the conclusion that it'd be easier to go with a Spartan/MJOLNIR-type powered armor, rather than the complexity that is Iron Man's armor. Now I just need to devise a way of coming up with technology that isn't supposed to exist for another 500 years.

Probably a bad time to note that the MJOLNIR armor is supposed to work exclusively with physically enhanced people.
Like Spartans.

Zombies in power armour? I would expect that to be cost prohibitive.
Just do with Luke and Jan did when they attacked Hellsing. Take your basic gouls/vampires some body armour and riot shields and give them SMGs.

I can't remember the specifications they had for MJOLNIR armor. s**t was pretty much made out of starship plating.
I do remember, though, that they tried to test it out on a marine. Every muscle movement was amplified through the roof and the guy got liquified.
Sucked to be him.
