I use my summons only on the bosses. The pathetic weakling monsters aren't even worth the MP cost.

Mostly, I rely on the Summons during the boss fights... but when I'm bored I use them on the lower level monsters or in normal fights.
My favs are any of the Bahamut Summons and Odin... you gotta love Odin.
A little off the record, but when it comes to Final Fantasy 8; I like Ifrit, Odin, Eden, the Lightening bird and Bahamut

Knight of the Round is the best but oh gawd it takes for ever, I like Shiva, she's like I think a classic and it's really good.

Odin's my favorite. I've always had a liking for him in the game for some reason. Bahamut Zero and Hades are cool as well.
