I know the answer.
BWAHAHAHAHAAAA!
ninja
Though it isn't really much of a riddle... it's just thinking outside of the box, as she said.
And y'know, the answer was one of the things that I thought about JOKINGLY. xD;

It's not a riddle. D<
Well, not really. It says they'd follow the criminal or his messenger. And then it says the diamond left the park and reached the villain (aka criminal). So that can only mean a messenger received it and got away.
And since she told us to think outside the box, I can only think of a few... unorthodox things. D<

This is a true story which happened in Taiwan. When the rich man reached the phone booth he found a carrier pigeon in a cage. It had a message attached telling the man to put the diamond in a small bag which was around the pigeon's neck and to release the bird. When the man did this the police were powerless to follow the bird as it returned across the city to its owner.

It's not that they were powerless, they just didn't try enough, that why every police department should have its own hawk division.
This is as light as a feather, yet no man can hold it for long. What is it?
Not quite as good as the rehearsal one, still it's worth taking the 3 seconds to 6 years to solve. Any longer than that and you really need to get on with life.

Air is close.... I think, it depends I suppose......
A hint, you certainly use it daily, unless your six feet under, then I suppose you don't have much use for it.

I suppose you could technically say air, as you do hold it. But, I assume, the more correct answer is a breath.
I flow in the wind and wither soon after. I'm as flexible as rubber but can crumble ere later.

Sure it does. o_O
Leaves blow in the wind, land on the ground later and withers due to lack of water. And I've felt leaves where I could completely bend it and it still retained it's shape and some simply crumble into a thousand pieces. surprised

By ere later I guessed you meant later when it was dried out and lost its elasticity.
Think of words ending in -GRY. Angry and hungry are two of them. There are only three words in the English language. What is the third word? The word is something that everyone uses every day. If you have listened carefully, I have already told you what it is.
As a hint, there is unneeded information in this riddle.
