They work like this:
If you buy a Generation 1, it has it's first set of poses. You wait (x) weeks, it evolves, acquiring a completely new pose set. It loses the old pose set.
When Gen 1 evolves, Gen 2 comes out, and it has the first set of poses. When (x) weeks pass again, Gen 1 evolves to ANOTHER new pose set, and Gen 2 moves up to the next set of poses. And Gen 3 is released.
And so on and so on. When an item fully evolves, all previous poses are unlocked. However, if you have a later generation, you have to wait however many more evolution cycles for it to finish evolving.
So if you buy a 7th generation Lotus, you will have to wait 7 evolving cycles (which is 3 weeks, I believe) to acquire the poses that the 1st generation has now.
Patient people can wind up paying less for later generations on the marketplace and wind up with the same item, but for people who want the poses NOW NOW NOW, they'll pay a premium for early gens.

Evolving items develop a new form (generation) every one or two weeks. Higher the generation "newer" is the item, meaning less transformations have passed and thus it haven't achieved the "nice" forms yet. Lower the generation, the item has passed by some evolutions already and supposedly have better item forms.
Evolving items do not acumulate forms until they reach the end of the evolution. They usually just have a couple of poses per generation, so as weeks go by the item will lose and gain features according to its evolution calendar. What new forms has a first generation item today, will lose them in one or two weeks, and by then, the second generation items will now have those very same forms, then the third generation, then the fourths... and goes on.
All evolving items you buy from the Cash Shop will come in their simplest and oldest forms, these items are the ones that keep going down into 7th, 8th, 9th generations as weeks pass by. If you want one of the new transformations (as it is in this case with the Cosmic Skin) you must get the oldest released one, the first generation one.
Edit. Beaten to it. By almost 20 minutes !. xp
