A statement is a statement, I defined it up there.
"You know sciency stuff..." is an incomplete statement when the ellipsis is left there due to the initial structure of the sentence itself. It implies there is more to the thought, like "You know sciency stuff and I think you're the coolest." or "You know sciency stuff and I have a pickle for a nose."
Ergo, the statement was open-ended, prompting me to inquire anything left.
I'm not exactly sure how that was difficult for you to understand. >.>
