Let me put it to you this way; the hollow hole in regular, non-Arrancarized hollow is meant to stand for the loss of their heart. However, when a Hollow gains Shinigami powers, it's hole moves. Why would that suddenly move if not to represent the gaining of a heart? Where did the heart come from, you may ask? Shinigamification. We've seen Ichigo have an inner hollow that granted him Hollow powers, and I'd be willing to bet Arrancar gain something similar that symbolizes a new heart, which gives them their human appearance.
I have a bit of obscure proof to back this up; Uryu targets Cirucci's Chain of Fate on the hunch that Arrancar would share Shinigami physiology, and when it hit, she lost her Res, her mask and any trace of her power. If Shinigamification granted them this, I think it would grant them something like a heart as well. I can't really explain where Ulquiorra's heart would be, but meh. That's just how I see it.
Anyway, Vampires are immortal, so I'm pretty sure that makes for a good key difference.

Personally, I've always RP'd Arrancar RPC's as having hearts since they apparently having blood pumping through their veins and not just... there.
I mean, I'm no doctor, but I think un-pumped blood would just leak out of a wound and not go spraying under pressure like it has done before.
Then again, Kubo's an idiot. >.>

-In regards to 3- That's fine. It's actually kinda comical in that they're fighting over who gets to whoop Kazuma's big butt xp Prideful Captain who doesn't want the Lieutenant hurt but the defensive, caring Lieutenant doesn't want her hurt either. It's perfect 3nodding
