It is prescribed by herbalists to help treat liver disease, reducing cell damage caused by radiation and Chemotherapy treatments, reducing insulin resistance in people with type 2 diabetes, reducing cancer growth and possibly preventing treatment. It can be eaten raw, boiled and buttered, par-boiled and roasted. The Spiny Bracts on the flower head were eaten like artichoke, and the peels peeled and soaked overnight (to remove the bitterness) and then stewed. Leaves can be trimmed of prickles and used as a spinach substitute.
