Ooh that's a tough choice.. Probably Patchouli, Marisa or Alice.
Though I know I'd be the one to screw up the triangle and be hated forever by Touhou fans
I'll go with Patchy for all of these questions
1: If you were to cheat on your Wife/Girlfriend. Who would it be? Marisa is not a choice at all.
Mari- actually, Sakuya. Besides, she comes with a maid outfit
2: Your wife/Girlfriend wants to go on a seven day vacation! She tells you nothing about where to go but you have a feeling she wants to go to a special place. Where do you take her and what type of room would you get?
I would see if she wanted to go to Venice probably a library tour, seeing as she's probably never traveled due to her anemia and asthma
3: Where did you meet your Wife/Girlfriend? and how did you two fall in love? (can be in the outside world as this is all fantasy.)
We most likely met at the Scarlet library, when I asked Remilia if she had any interesting books I could borrow

I noticed some peeps tried to cheat on there toon with Marisa...
reason why Marisa is not a choice to cheat with is....she would ditch you after stealing your heart (lol). But the real reason is that i would suspect everyone would say Marisa and to keep it interesting, i kept her out of the cheating game.
