Bottoming out at 2 or 3k could be a good idea, then. I know I've seen more than a couple of nice gold shop items at that price.

Well the idea of the 5-10 is that you give about as much as you get.
But 2-5k range is just as easily done.
I'm slightly on the rich side so to me 5-10k is not a lot.

Besides, if you want to give a more expensive gift, you can do so outside of Secret Santa if that's what you really wanted.
