Star Wars Wikipedia. It's got so much more and indepth stuff than the official site its kinda funny. Its a section of Wikipedia maintained entirely by fans...most of which know/care more than me...

Jedi (no "s" for plural, same with Sith) aren't really a species, they're an organization...more of a monistic(sp?) order than an organization really.....just one that consists only of Force Sensitives, which can be any specie. Sith started out as a species but eventually turned into much the same thing.
...and R2 units are a type of droid...and Greedo is a Rodian.
