The counter I'd use would work best for Mooo (naturally).
But with a speed-based fighter, their real problem is the lightness of their attacks--since they're constantly moving or in a state that makes them ready to move at a moment's notice, their grounding isn't as good, and thus, they aren't able to plant themselves to deliver particularly hard attacks. Like Deity says, just take your time and think it through.
Also, like the commander in Zero Wing says--"YOU KNOW WHAT YOU ARE DOING. NOW GO--FOR GREAT JUSTICE!!!"

Except for the fact that Fierce Deity (the strongest form, which I'm fighting if memory serves) is a powerhouse in addition to being a speedphreaker

@Trei: The first part (grabbing Trei's arm) is a quasi-upward grab...it's coming from below at around a 40 degree angle. That way, when he stands up and pushes Trei's arm forward without shifting his grip, Trei's arm twists in so it's harder to counter with it.

Hmm. That pretty much rules out one counter idea, because it relied on you pushing up hard enough BEFORE grabbing. See, when you hold a weapon by the sheathe, then thrust with the hilt, it leaves the rest of the sheathe resting on your arm. I was intending on using the blades sort of like batons, because those sheathes would give me parry points ( a curved surface deflects easier than a flat one, after all.), and my thought was that if you pushed up, seeing as Trei fights loose muscled, I could roll the sheathe around Trei's arm to evade the grip. However, if you straight grab, that makes things a little more difficult.
