I personally never saw the english censored version, but what I heard let no doubt: they say Hyoga is a surfer, like the ones of Hawaii but in Siberia, meaniong sometimes below zero°C...
Sephiroth... Well I fought him with level 99 , all of the Master Materias on Cloud, he always using Knights of the Round and everyone else using Mime...
I think another member had the Master Materia too (You get a pack by defeating a weapon and delivering the item it has to a man in a town (Oh, you explaind So well XP) and another one(s) if you get all the materias of red/green/yellow color to max level and talk with the floating giant one in buggehagen's room.
I doubt I needed so much, though... But I did it anyway!

ummm i recommend haveing a maxed out heal, and revive. also final attack and phoenix...umm, knights of the round is a big help, and if you are using vincent, DONT put any healing things on vincent, if you use his limit break he wont be able to heal anyone and you will have a hard time

Well, to make your life easier, if you defeat Ruby Weapon and deliver to the old man I forgot where he lives he gives you either master materias or a gold chocobo (forgot wich), if you use morph in a monster that is a ship with a skeleton you get a materia with him that let you breath underwater and if you defeat emerald weapon (I REALLY sugest getting the breath underwater materia first) you get the other one (mm/choc).
