Acually, I've got two answers for this one:
A1: Because being a mercerany causes him a lot of stress and gardening calms him down.
A2: Because DOA characters like to keep their jobs and private lives sepate, like cold blooded assasin Christe, who babysits little kids on weekends to make ends meet at the end of the month.
Why is Zack obsessed with Tina when clearly Hitomi's the hottest, cutest, prettiest and most beautiful of them all?

Alright, lemme clear this up. I knwo you';re making fun ogf it Flippy-man,but it's "Jeet June-do".
His "watah" is supposed to be a version of a swallow's cry.
The feet movement isn't totally neccesary, but helps keep balance, give rhtyhm to movements (and timing of attacks) and does throw the opponent off.
