Pretty much anything you ask, I'll answer. I know alot about .hack, but my knowledge of roots,fragment and the end of sign is limited.

what are all the different things you can be in "the world"?

do you mean the world R:1 or R:2? i've only memorized the names for R:1 because they changed everything except for twin blade.

in the world R:1 the classes are

twin blade
heavy blade
blademaster
wavemaster
heavy axeman
long arm

later, the world developed a new character class: Werewolf. (this is in the manga and is also mentioned in .hack//GU.)

You can only equip items that are designated to your class. Most items only have limitations on them as to what class cant wear them. For example, a lot of the armor can be worn by multiple classes, but usually has a few classes that can't wear it. Then there is some armor that can be worn by all classes. As far as weapons go, they can only be equipped by the designated class.
